just go balls to the wall with a grinder/sander/paint stripper to get it down to bare metal and let nature take it's course

I used to do metal art for Studio Iron in gilbert and this is what I did...

Use Muriatic Acid.
I use very diluted acid/water mix and apply it to the cold metal let it sit for about 24ish hours and it will be pretty covered with rust
(I personally used a torch to heat it up which RAPIDLY speeds up the process and also allows you to change the color of the rust from light orange to a dark purple, BUT DO NOT HEAT UP YOUR HOOD!).

Then for a hood... spray the metal down with warm water only (add a little salt to speed things up) three to four more days. The water baths remove most of the acid compound. The metal will continue to rust and pit so you have to stop the process at the desired aesthetic. I use hydrogen peroxide the 99% stuff to stop the chemical process (I Learned this lil tip/trick in chemistry ;) ).
